Meat & Protein
- 4 chicken leg quarters bone-in, skin-on, about 3.5 lb total, patted dry
Produce
- 2 lb russet potatoes cut into 1.5-inch chunks
- 1 yellow onion sliced
Pantry & Canned Goods
- 1 cup chicken broth low sodium
Seasonings & Spices
- 2 tsp smoked paprika
- 1.5 tsp garlic powder
- 1.5 tsp kosher salt divided
- 0.5 tsp black pepper
Add the potatoes and onion to the slow cooker, sprinkle with ½ teaspoon of the kosher salt, and pour the chicken broth over them.
In a small bowl, mix the smoked paprika, garlic powder, black pepper, and the remaining 1 teaspoon kosher salt. Pat the leg quarters completely dry and rub the seasoning all over them, including under the skin where you can.
Lay the leg quarters skin-side up on top of the potatoes, overlapping slightly if needed. Do not stir.
Cover and cook on LOW for 6 to 7 hours or HIGH for 3½ to 4 hours without lifting the lid, until the chicken registers at least 175°F near the bone and the potatoes are fork-tender.
Optional crispy skin: heat the broiler, move the leg quarters skin-side up to a foil-lined sheet pan, and broil 3 to 5 minutes, watching closely, until the skin is browned and crisp.
Serve the chicken over the potatoes and onions, spooning the pan juices over the top.
Four leg quarters need at least a 6-quart slow cooker. An oval one fits them best.
Leg quarters are safe at 165°F, but dark meat gets far more tender at 175°F and above, which this cook time reaches easily.
Skipping the broil is fine. The meat is just as tender, and the skin will be soft rather than crisp.
Chicken thighs or drumsticks work the same way. Use about 3 lb of either.
Cost: about $5.78 total, or $1.44 per serving, using Walmart online prices from October 2026.
