Ingredients

  • 1.5 lbs boneless skinless chicken thighs cut into 1-inch pieces

Produce

  • 6 garlic cloves minced
  • 4 sprigs fresh thyme leaves only — or ½ tsp dried thyme
  • 1 lemon zested — about 1 tsp zest
  • 3 tbsp fresh parsley roughly chopped, for garnish

  • 4 tbsp unsalted butter divided — 1 tbsp for searing, 3 tbsp for sauce
  • cup parmesan cheese freshly grated, for finishing

Pantry & Canned Goods

  • 8 oz egg noodles wide, dry — uncooked
  • 3 cups chicken broth low sodium
  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce

Seasonings & Spices

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ¾ tsp kosher salt divided
  • ½ tsp black pepper

Instructions
 

  • Season the chicken pieces with garlic powder, onion powder, smoked paprika, ½ tsp kosher salt, and black pepper. Toss to coat evenly.
  • Heat the olive oil and 1 tbsp butter in a large deep-sided skillet over medium-high heat. Add the chicken pieces in a single layer — work in batches if needed. Sear for 3 to 4 minutes without moving, then toss and cook for another 2 minutes until deeply golden and cooked through. Remove to a plate — do not wipe the pan.
  • Reduce heat to medium. Add the remaining 3 tbsp butter to the same pan. Once melted, add the minced garlic and fresh thyme leaves. Cook for 60 to 90 seconds, stirring constantly, until fragrant and the garlic is just beginning to turn golden. Add the Worcestershire sauce and stir — it will sizzle and pick up the browned chicken bits from the bottom of the pan.
  • Pour in the chicken broth and add the remaining ¼ tsp kosher salt. Scrape the bottom of the pan to release any remaining fond. Bring to a boil.
  • Add the dry egg noodles and stir to submerge in the broth. Reduce heat to medium, cover with a lid, and cook for 8 to 10 minutes, stirring every 3 minutes to prevent sticking, until the noodles are tender and have absorbed most of the liquid. The sauce will be glossy and slightly thickened from the noodle starch.
  • Return the cooked chicken to the skillet and fold it into the noodles. Remove from heat. Add the lemon zest and grated parmesan and stir to combine. Taste and adjust salt. Garnish with fresh parsley and serve directly from the skillet.

Notes

Chicken thighs are the only cut worth using here. They stay juicy through the sear and don't dry out when folded back into the hot pan at the end. Chicken breasts work but are less forgiving — if substituting, reduce the initial sear to 2 to 3 minutes per side and don't return them to heat for longer than needed to warm through.
The Worcestershire sauce added after the garlic is the depth ingredient most similar recipes skip entirely. It has the same savory, slightly sweet umami character as a proper pan sauce and it picks up all the browned chicken bits from the bottom of the pan, incorporating them into the sauce.
Lemon zest at the end — not lemon juice. Juice would make the sauce acidic and slightly thin. Zest adds the bright citrus flavor and aromatics without changing the texture or acidity. It's a finishing note that lifts the whole rich dish without overwhelming it.
The egg noodles cook in the broth and release starch as they absorb it, thickening the sauce naturally. Stir every 3 minutes to prevent the noodles from sticking to the bottom.
Leftovers keep for 3 days. The noodles absorb more liquid as they sit — add a splash of chicken broth when reheating on the stovetop over low heat.
