Produce
- 2 avocado sliced — add fresh at serving time, not during meal prep assembly
- 1 cup cherry tomatoes halved
- 1 lemon cut into wedges — to squeeze over avocado to prevent browning
Seasonings & Spices
- 2 tsp everything bagel seasoning
- ¼ tsp kosher salt for the eggs
- ¼ tsp black pepper for the eggs
Bring a medium pot of water to a full rolling boil. Lower the eggs gently into the boiling water using a spoon — do not drop them in. Boil for exactly 11 minutes for fully set yolks with no green ring. While the eggs boil, prepare an ice bath: a large bowl filled with cold water and ice cubes.
At 11 minutes, transfer the eggs immediately to the ice bath. Let them sit for at least 5 minutes — the ice bath stops the cooking instantly, which is what prevents the green-gray ring around the yolk. It also contracts the egg slightly away from the shell, which is why ice-bathed eggs peel more easily.
Peel the eggs once cooled. To peel cleanly: gently crack the wide end of the egg first (the air pocket is there and gives you a starting point), then roll the egg lightly on the counter to crack the shell all over before peeling under a thin stream of cold running water. The water gets under the membrane and helps the shell slide off in larger pieces.
Halve each egg and season with a pinch of kosher salt, black pepper, and a sprinkle of everything bagel seasoning. Divide among 4 snack containers (2 whole eggs per box). Add halved cherry tomatoes to each container.
For the avocado: either pack it separately and slice fresh at work, or slice it, squeeze lemon juice over each piece, and pack it in a small zip-lock bag pressed airtight to minimize browning. It will stay acceptable for about 4 to 6 hours. Do not add pre-sliced avocado to containers you're planning to store for multiple days — it browns and deteriorates quickly.
Estimated protein per snack box: ~14g from 2 hard boiled eggs (approximately 6g each), with avocado adding 2g and cherry tomatoes adding 1g.
The 11-minute boil plus ice bath is the specific method that produces hard boiled eggs with fully set yolks, no green ring, and shells that peel without taking chunks of white with them. The green-gray ring around overcooked yolks is iron sulfide — it forms when eggs are cooked too long or not cooled quickly enough. Boil for exactly 11 minutes, ice bath immediately, peel after 5 minutes of cooling.
Older eggs peel more easily than fresh eggs. The air pocket between the shell and membrane gets larger as the egg ages, which makes the shell easier to separate. If you're buying eggs specifically for meal prep boiling, buy them a few days before you plan to boil.
Peeled hard boiled eggs keep for up to 5 days in the fridge in an airtight container. Unpeeled hard boiled eggs keep for up to 1 week. Peel only what you'll eat that day if you prefer maximum freshness.
The avocado is the only component that doesn't travel well for extended prep. Handle it one of three ways: pack separately and slice fresh at work, add it the morning of and eat within 4 hours, or swap it for sliced cucumber for a fully prep-stable box.
