Produce
- 2 large cucumber sliced into ¼-inch rounds — about 24 slices total
- 3 tbsp fresh dill roughly chopped
Dairy
- 1 cup cottage cheese full-fat — whipped or blended smooth for best texture
Seasonings & Spices
- 2 tsp everything bagel seasoning
- ¼ tsp black pepper
- ¼ tsp kosher salt optional — everything bagel seasoning already contains salt
If using regular (not pre-whipped) cottage cheese, blend it in a small blender or food processor for 30 seconds until smooth and creamy. This step is optional but dramatically improves the texture — blended cottage cheese spreads cleanly and has a similar consistency to whipped cream cheese. Stir in the black pepper and fresh dill.
Slice the cucumbers into ¼-inch rounds. Pat them dry with a paper towel — excess moisture on the surface dilutes the cottage cheese topping and makes the bites soggy faster.
Spoon or pipe approximately 1 teaspoon of the cottage cheese mixture onto each cucumber round. A small zip-lock bag with the corner snipped works well for piping if you want a cleaner presentation.
Sprinkle everything bagel seasoning evenly over each bite. Serve immediately or store assembled in an airtight container in the fridge for up to 2 days. For best texture when meal prepping, store the cottage cheese mixture and cucumber slices separately and assemble at serving time.
Estimated protein per serving (6 bites): ~15g from the cottage cheese. Full-fat cottage cheese provides roughly 14g of protein per half cup — one of the highest protein-per-calorie ratios of any dairy product.
Blend the cottage cheese. This is the step that converts a grainy, watery topping into something smooth and pipeable that actually stays on the cucumber. A blender or small food processor, 30 seconds. The texture difference is significant enough that it changes how the snack eats entirely.
Pat the cucumber slices dry before topping. Any surface moisture will dilute the cottage cheese and cause it to slide off. Thirty seconds with a paper towel is the difference between bites that hold together and ones that fall apart at your desk.
For meal prep: store the blended cottage cheese mixture in one container and the cucumber slices in another. Assemble at work or right before eating. Pre-assembled bites get soggy after about 4 hours.
Swap fresh dill for chives, fresh parsley, or a pinch of smoked paprika for variety across the week.
