Ingredients

Pantry & Canned Goods

  • 1.5 cups rolled oats old-fashioned oats — not instant
  • ¾ cup natural peanut butter creamy, no added sugar — stir well before measuring
  • 2 scoops vanilla protein powder about 60g total — whey or plant-based both work
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • ⅓ cup dark chocolate chips mini chips distribute more evenly than standard size

Seasonings & Spices

  • ¼ tsp kosher salt only if using unsalted peanut butter

Instructions

  • In a large bowl, combine the rolled oats, protein powder, and salt if using. Stir to combine the dry ingredients evenly before the wet ingredients go in — this prevents pockets of protein powder in the finished balls.
  • Add the peanut butter, honey, and vanilla extract. Stir until everything is fully combined and a thick, uniform dough forms. The mixture will be stiff — use a silicone spatula or clean hands to bring it together. If the mixture is too dry and crumbly, add 1 tsp of honey at a time until it holds together when squeezed. If too wet and sticky, add 1 tbsp of oats at a time.
  • Fold in the chocolate chips. Refrigerate the bowl for 15 minutes — this firms the mixture slightly and makes rolling significantly easier. Cold dough sticks to itself rather than your hands.
  • Scoop approximately 1.5 tablespoons of dough per ball — a cookie scoop makes this faster and produces uniform sizes. Roll firmly between your palms until round and smooth. Place on a parchment-lined plate or sheet. Refrigerate for at least 30 minutes to set before eating or packing.

Notes

Estimated protein per serving (2 balls): ~12g. Protein powder contributes the bulk (approximately 15g per scoop depending on brand), with peanut butter adding roughly 7g per 2 tbsp and oats adding 3g per half cup.
The moisture balance is the most important thing to get right and it varies by protein powder brand. Whey protein absorbs less liquid than plant-based protein — if using plant-based powder the mixture may need 1 to 2 extra teaspoons of honey or peanut butter. The test: if the mixture holds together when you squeeze a tablespoon of it in your fist, it's ready to roll. If it crumbles, add moisture. If it sticks to everything, add oats.
Old-fashioned rolled oats only. Instant oats absorb moisture too quickly and produce a dense, gummy texture. Quick oats work as a middle ground but old-fashioned oats give the best chew and hold up better through the week in the fridge.
Natural peanut butter — no added sugar or oil. The natural oils in natural peanut butter solidify slightly when refrigerated, which is what holds the balls together. Conventional peanut butter with added hydrogenated oils doesn't do this the same way.
Keeps in the fridge for up to 7 days or the freezer for up to 3 months. Frozen balls thaw in about 10 minutes at room temperature.
