High Protein Turkey Taco Bowls

Ingredients
  

Meat & Protein

  • 1.5 lbs ground turkey 93% lean

Produce

  • 4 garlic cloves minced
  • 1 lime cut into wedges, for serving
  • 3 tbsp fresh cilantro roughly chopped, for garnish

Dairy

  • ½ cup plain Greek yogurt full-fat — used instead of sour cream for extra protein

Pantry & Canned Goods

  • 2 cups long grain white rice uncooked
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned, drained
  • 1 cup salsa store-bought, your preferred heat level
  • 1 tbsp olive oil

Seasonings & Spices

  • 1.5 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¾ tsp kosher salt

Instructions
 

  • Cook the rice according to package directions. While the rice cooks, prepare the turkey.
  • Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, for 5 to 6 minutes until browned and cooked through. Add the minced garlic and cook for 30 seconds. Add the chili powder, cumin, smoked paprika, garlic powder, and salt. Stir to coat and cook for 1 minute.
  • Add the salsa to the skillet and stir to combine. Let it simmer for 2 to 3 minutes until slightly reduced and the turkey is fully coated. Remove from heat.
  • Divide the rice evenly among 4 meal prep containers. Top each with an equal portion of the seasoned turkey, black beans, and corn. Keep the Greek yogurt and any fresh toppings in separate small containers until serving.
  • At serving time: reheat the bowl for 90 seconds in the microwave. Top with a generous dollop of Greek yogurt, fresh cilantro, and a squeeze of lime. The Greek yogurt works exactly like sour cream — same cool, creamy contrast — with significantly more protein per tablespoon.

Notes

Estimated protein per bowl: ~40g. Ground turkey provides roughly 30g per serving, with black beans adding 7g and Greek yogurt contributing 3 to 4g more than sour cream would.
Greek yogurt instead of sour cream is the swap that makes this a high-protein meal prep instead of just a regular taco bowl. Full-fat Greek yogurt has roughly 17g of protein per 6 oz versus sour cream's 2g. The texture and tang are nearly identical — most people can't tell the difference once it's on a warm bowl.
93% lean ground turkey is the right choice here. 99% lean turkey is too dry and doesn't brown properly. The small amount of fat in 93% lean is what gives the meat good texture and allows it to absorb the spice blend properly.
Bowls keep in the fridge for 4 days. The turkey and rice reheat well — add the Greek yogurt and fresh toppings after reheating. Does not freeze well once assembled; freeze the turkey mixture alone for up to 3 months.
