Meat & Protein
- 8 oz deli turkey breast thin sliced — about 12 to 16 slices
Dairy
- 4 oz sharp cheddar cheese thinly sliced or in small rectangles to fit the turkey
Lay the turkey slices flat on a clean surface. Spread a thin, even layer of Dijon mustard across each slice — about ¼ tsp per slice. Season with a pinch of black pepper.
Place a slice of sharp cheddar on each turkey slice, positioned slightly off-center toward the bottom edge of the turkey. The cheese should cover most of the turkey without extending past the edges.
Roll each turkey slice tightly from the bottom edge upward, keeping even pressure throughout so the roll doesn't unravel. The Dijon acts as a light adhesive that holds the roll together.
Leave whole for a portable grab-and-go snack, or slice each roll into 3 to 4 pinwheel rounds for a more snack-box presentation. Secure with a toothpick if slicing into pinwheels. Store in an airtight container in the fridge for up to 4 days.
Estimated protein per serving (3 to 4 rolls): ~20g. Deli turkey breast provides approximately 14g per 4 oz serving and sharp cheddar adds roughly 6g per oz.
Dijon, not yellow mustard. Dijon has a sharper, more complex flavor that makes the whole roll-up taste elevated rather than like a kid's lunch. It also has better adhesive properties that help the roll stay closed. A thin swipe is enough — you're seasoning, not dressing.
Sharp cheddar is the right cheese here. Mild cheddar, American, or Swiss all work technically but sharp cheddar has the assertive flavor that holds its own against the turkey and Dijon. Pre-sliced cheddar from the deli counter rather than pre-packaged slices gives you better control over thickness.
For variety across the week: swap Dijon for whole grain mustard, add a thin layer of cream cheese instead of mustard for a richer version, or add a strip of roasted red pepper or a few spinach leaves inside the roll for color and crunch.
These are the most portable snack in the lineup — no utensils required, no assembly at work, just pull from the container and eat.
