Caprese Skewers with Fresh Mozzarella

Caprese skewers are the high-protein snack that doesn’t look or taste like a high-protein snack. Fresh mozzarella balls, cherry tomatoes, and fresh basil threaded on toothpicks with a drizzle of balsamic glaze and good olive oil — about 15 grams of protein per serving, zero cooking, 5 minutes of prep. The visual is clean enough for a dinner party and the flavor is good enough that you’ll eat them because you want to, not because they’re on your meal plan.

Most of the snacks in this lineup taste like they’re working toward a fitness goal. This one tastes like an appetizer. That’s intentional. High protein eating plans fail when every meal and snack feels like a commitment — when the food doesn’t feel like a choice. Caprese skewers are a snack that happens to be high in protein rather than a high-protein snack that you’re tolerating.

This is a five-ingredient recipe where one ingredient carries almost all the flavor, texture, and protein. Fresh mozzarella — ciliegine (small balls) or bocconcini (medium balls) — is the right format. It’s soft, milky, slightly elastic, and pairs with the acidity of cherry tomatoes and balsamic in a way that no other cheese does. Shredded mozzarella, part-skim mozzarella, and aged mozzarella are all different products with different textures and flavors. Fresh mozzarella packed in water is what this recipe requires.

Pat the mozzarella dry before threading. Fresh mozzarella is packed in water and excess moisture on the outside dilutes the olive oil and balsamic drizzle, causing them to pool rather than coat.

Balsamic glaze applied during assembly causes the cherry tomatoes to release water and the basil to wilt and darken within an hour. Add it at serving time — whether that’s when you plate them at home or when you open the container at your desk. Thirty seconds of drizzling makes the presentation significantly more appealing and keeps the components from deteriorating.

Cherry tomato half, basil leaf folded in half, mozzarella ball — in that order on the toothpick. This order keeps the basil sandwiched between the tomato and mozzarella, which protects it from direct air exposure and slows browning. It also produces the most visually appealing cross-section when you look at the skewer from the side.

Assembled skewers (without the drizzle) keep for 3 days refrigerated. Store in a container with a damp paper towel on top to prevent the mozzarella from drying out at the surface. Pack the balsamic glaze in a small separate container. For other recipes that use fresh mozzarella and similar flavors, the Caprese Flatbread covers the same combination in a dinner format.

Ingredients

Produce

  • 1 cup cherry tomatoes halved
  • ¼ cup fresh basil leaves only — one leaf per skewer

Dairy

  • 8 oz fresh mozzarella balls ciliegine or bocconcini size — one ball per skewer

Pantry & Canned Goods

  • 2 tbsp balsamic glaze store-bought
  • 1 tbsp olive oil good quality extra virgin

Seasonings & Spices

  • ¼ tsp kosher salt flaky sea salt if available
  • ¼ tsp black pepper

Instructions

  • Pat the mozzarella balls dry with a paper towel — they come packed in water and excess moisture dilutes the olive oil and balsamic on the finished skewer.
  • Thread each toothpick or small skewer in this order: one cherry tomato half, one fresh basil leaf folded in half, one mozzarella ball. Repeat until all ingredients are used — approximately 16 to 20 skewers depending on size.
  • Arrange the skewers on a plate or in a snack container. Drizzle the olive oil and balsamic glaze evenly over the top. Season with flaky salt and black pepper immediately before serving.
  • For meal prep: store the assembled skewers (without the olive oil and balsamic drizzle) in an airtight container for up to 3 days. Add the drizzle and seasoning at serving time — the balsamic can make the tomatoes weep liquid if applied in advance.

Notes

Estimated protein per serving: ~15g from the fresh mozzarella. Fresh mozzarella provides approximately 6g of protein per oz — 8 oz across four servings yields roughly 12g per serving, with cherry tomatoes and basil adding 2 to 3g.
Fresh mozzarella is the non-negotiable ingredient here. Part-skim shredded mozzarella or low-moisture mozzarella won’t work — the texture and flavor are completely different. Fresh mozzarella has a soft, milky quality that makes this snack feel elevated rather than assembled. It’s also naturally higher in protein than aged mozzarella.
Ciliegine (small balls) or bocconcini (medium balls) are the right size — one ball per skewer. If only larger fresh mozzarella is available, cube it into approximately 1-inch pieces.
The balsamic glaze goes on at serving time, not during assembly. Balsamic applied in advance causes the tomatoes to release liquid and the basil to wilt and darken. Thirty seconds of drizzling at work makes the presentation significantly better.
This is the snack that doesn’t feel like a fitness snack — it’s what you’d serve at a dinner party. That’s the point. High protein doesn’t have to mean protein bars and sad containers of plain chicken.
