White Chicken Chili Quesadilla with Rotisserie Chicken

A white chicken chili quesadilla with rotisserie chicken is what happens when you want white chicken chili but don’t have three hours, a Dutch oven, or the patience to stand over a pot. There’s no shortage of white chicken chili recipes out there, and there’s no shortage of chicken quesadilla recipes either. What’s strangely hard to find is the obvious combination: the creamy, cumin-warm, green-chile flavor of white chicken chili, folded into a crispy, buttery tortilla with a real cheese pull.

So here it is. Nine ingredients, one skillet, about 20 minutes, and roughly 35 grams of protein per quesadilla. Rotisserie chicken does the heavy lifting. Cannellini beans, canned green chiles, and cumin bring the chili flavor. And the part that makes it work is mashing half the beans with cream cheese into a creamy base that tastes like the inside of a bowl of white chicken chili and glues the whole filling together so nothing falls out when you flip it.

White chicken chili gets its body from two places: beans that break down as they simmer, and some kind of dairy, usually cream cheese or sour cream, stirred in at the end. That creamy, thick, spoonable texture is the thing people love about it. A quesadilla doesn’t simmer, so you have to build that texture up front.

Mashing half the cannellini beans with softened cream cheese and cumin does exactly that. The mashed beans and cream cheese turn into a thick, savory paste that coats the chicken, the whole beans, and the green chiles. In one step, you get the creamy chili texture, even seasoning (the cumin is mixed into the paste instead of sitting in dusty pockets), and a filling that holds together like mortar.

That last part matters more than it sounds. Loose shredded chicken and whole beans are slippery. Pile them into a tortilla with nothing binding them and the filling slides out the side the second you flip it. With the mashed bean base, you can flip, press, and cut into clean wedges without leaving half the dinner in the pan.

Mash only half the beans. The whole ones give the filling that chunky, chili-like bite. And let the cream cheese come to room temperature first. Cold cream cheese fights you and leaves lumps. If you forgot to set it out, 10 to 15 seconds in the microwave fixes it.

Most white chicken chili recipes start with raw chicken breasts that simmer in the pot until they’re cooked through and shreddable. That’s great for chili and completely unnecessary here. A store-bought rotisserie chicken is already cooked, already seasoned, and shreds in about three minutes with two forks.

Two cups of shredded chicken is roughly a third to half of a standard rotisserie chicken, depending on the size. Use a mix of white and dark meat. The dark meat stays juicier and keeps the filling from tasting dry. Pull the chicken into bite-sized shreds rather than big chunks so it folds into the bean mixture evenly and the quesadilla lies flat in the pan.

If you’d rather make your chicken ahead, Slow Cooker Shredded Chicken Breast is the make-ahead option. Make a batch on Sunday and it covers this, tacos, and a couple of lunches during the week.

Canned diced green chiles are packed in liquid, and that liquid is the enemy of a crispy quesadilla. Dump them in straight from the can and the extra moisture turns to steam inside the tortilla, softening it from the inside out.

Pour the chiles into a fine-mesh strainer, press them gently with a spoon, then pat them dry with a paper towel. It takes 30 seconds and it’s the difference between a crisp, golden tortilla and a limp one. Canned green chiles are mild, with more roasted pepper flavor than heat. If you want real kick, add a finely diced fresh jalapeño or swap the Monterey Jack for pepper jack.

This is also why there’s no salsa verde or broth in the filling. Both show up in white chicken chili, and both would add liquid a quesadilla can’t handle. Salsa verde works great on the side for dipping, which is where it belongs.

Every good quesadilla gets cheese twice: a layer on the bottom that melts into the tortilla and anchors the filling, and a layer on top that seals it in. The filling here is already creamy from the cream cheese, so this one uses a little less shredded cheese than a standard quesadilla, about 3 tablespoons on each side, and still gets a big, stretchy cheese pull.

Use freshly shredded Monterey Jack. It’s mild, it melts smoothly, and it doesn’t overpower the cumin and green chiles. Pre-shredded bagged cheese is coated with anti-caking agents that keep it from melting into a smooth layer, and you’ll notice the difference in the cheese pull.

The rest is technique. Cook over medium heat, not high. The tortilla needs time to crisp while the cheese and filling heat through, and on high heat the outside burns before the middle is warm. Use butter, not oil, for a richer, more golden crust. Press gently with a spatula to help the melt. And let the quesadillas rest for a minute before cutting so the filling sets and the wedges come out clean.

If you already have a pot of white chicken chili in the fridge, this quesadilla is the best way to use it up. The trick is getting rid of most of the liquid. Use a slotted spoon to scoop out the thick, chunky part of the chili, leaving the brothy liquid behind, and let it drain for a minute.

Stir about 2 cups of that drained chili into the mashed bean and cream cheese base in place of the rotisserie chicken, whole beans, and green chiles. The mashed beans soak up any liquid the slotted spoon missed, and the filling firms up just like the fresh version.

For toppings and dipping, go with what you’d put on a bowl of white chicken chili: salsa verde, sour cream or plain Greek yogurt, sliced avocado, cilantro, and a squeeze of lime.

The filling is the part worth making ahead. Mix it and keep it in an airtight container in the fridge for up to 4 days. Rotisserie chicken is best used within 3 to 4 days of purchase, so count from the day you bought the chicken, not the day you made the filling.

Cooked quesadillas keep up to 3 days in the fridge. Reheat them in a dry skillet over medium-low heat for 2 to 3 minutes per side, or in an air fryer at 375°F for 3 to 4 minutes. Skip the microwave, which turns the tortilla soft and chewy.

To freeze, assemble the quesadillas without cooking them, wrap each one tightly, and freeze for up to 3 months. Cook from frozen over medium-low heat with a lid on for the first few minutes so the filling heats through before the tortilla gets too dark, then uncover to crisp.

Notes

Cream cheese mashes in much more easily at room temperature. Straight from the fridge, microwave it for 10 to 15 seconds first.
Only mash half the beans. The whole beans give the filling its chili-like texture.
Have leftover white chicken chili? Drain off most of the liquid with a slotted spoon, then stir 2 cups of the thick chili into the mashed bean and cream cheese mixture in place of the chicken, whole beans, and chiles.
For more heat, use pepper jack instead of Monterey Jack or add a finely diced jalapeño to the filling.
Slow Cooker Shredded Chicken Breast is a make-ahead substitute for the rotisserie chicken.
The filling keeps 4 days in the fridge.
Roughly 35g protein per quesadilla.
