Turkey and Cheese Roll-Ups
Turkey and cheese roll-ups are the most portable high-protein snack in the lineup. Deli turkey spread with Dijon mustard, layered with sharp cheddar, rolled tight, and either left whole for grab-and-go eating or sliced into pinwheels for a more intentional snack box presentation. About 20 grams of protein per serving, zero cooking, 5 minutes of prep, and they hold for four days in the fridge. No utensils required, no refrigeration needed for a few hours, no assembly at work.
Most turkey roll-up recipes are written for kids’ lunchboxes. This one is written for someone who wants a high-protein work snack that doesn’t taste like a kids’ lunchbox. The two details that make the difference: Dijon instead of mayo or plain mustard, and sharp cheddar instead of American or mild cheddar. Those two swaps move the flavor from “fine” to actually worth eating.
Dijon Is Load-Bearing
Dijon mustard applied in a thin, even layer across the turkey does three things. It adds a sharp, slightly complex mustard flavor that plain yellow mustard doesn’t have. It adds a mild acidity that cuts through the richness of the cheese. And it acts as a light adhesive that holds the roll closed without the need for a toothpick. Yellow mustard works technically. Dijon works better.
A thin swipe — about ¼ tsp per slice — is enough. You’re seasoning the roll, not dressing it. Too much Dijon and every bite tastes like mustard; the right amount and you can taste it without identifying it.
Sharp Cheddar Over Everything Else
Sharp cheddar has enough assertive flavor to hold its own against the Dijon and the turkey. Mild cheddar and American cheese both disappear into the background. Provolone works well as an alternative for a milder, slightly richer result. Pepper jack works if you want heat. The key is choosing a cheese with enough flavor presence to be a genuine component rather than just a texture addition.
Pinwheels vs. Whole Rolls
Left whole, these are the fastest possible work snack — pull one from the container and eat it in three bites. Sliced into pinwheels, they’re more visually appealing for a snack box format and work well alongside cucumber slices or cherry tomatoes. The Dijon holds the roll closed whether you slice it or not — if you’re slicing, use a sharp knife in one clean motion rather than sawing, which compresses the roll.
Customization
Add a strip of roasted red pepper inside each roll for color and sweetness. A thin layer of cream cheese under the Dijon makes the roll richer and adds more protein. A few spinach leaves adds crunch and nutrients without changing the flavor profile. All three additions add 30 seconds to the prep and make the snack more interesting across a week of eating the same thing.
Storage
Four days in the fridge in an airtight container. Keep them whole rather than pre-sliced if you want maximum shelf life — the cut surfaces dry out slightly faster. For other high-protein snack options to rotate through the week, the Hard Boiled Egg and Avocado Snack Boxes pair well with these for a complete desk snack rotation.

Turkey and Cheese Roll-Ups
Ingredients
Meat & Protein
- 8 oz deli turkey breast thin sliced — about 12 to 16 slices
Dairy
- 4 oz sharp cheddar cheese thinly sliced or in small rectangles to fit the turkey
Pantry & Canned Goods
- 2 tbsp Dijon mustard
Seasonings & Spices
- ¼ tsp black pepper
Instructions
- Lay the turkey slices flat on a clean surface. Spread a thin, even layer of Dijon mustard across each slice — about ¼ tsp per slice. Season with a pinch of black pepper.
- Place a slice of sharp cheddar on each turkey slice, positioned slightly off-center toward the bottom edge of the turkey. The cheese should cover most of the turkey without extending past the edges.
- Roll each turkey slice tightly from the bottom edge upward, keeping even pressure throughout so the roll doesn’t unravel. The Dijon acts as a light adhesive that holds the roll together.
- Leave whole for a portable grab-and-go snack, or slice each roll into 3 to 4 pinwheel rounds for a more snack-box presentation. Secure with a toothpick if slicing into pinwheels. Store in an airtight container in the fridge for up to 4 days.
